Ris á la campa

A tasty dish to enjoy in the mountains or by the lake, specially together with newly catched fish or dired raindeer meat. The recipe is for two people.

You need

0.5 pc yellow onion
or roasted onion
0.5 tbsp Cooking Oil
5 pcs Dried apricots
0.5 tsp Ginger (ground)
0.5 tbsp honey
3 dl instant rice
1.8 dl water
Salt & pepper
150.0 grams of ham 
or dried reindeer meat
or fish
or Quorn

How to (20 min)

Fry the onion lightly in cooking oil a few minutes on midlde heat until it is glossy but not burnt.

Add the apricots, ginger and honey.
Add the instant rice and fry it shiny.

Add water and simmer with the lid on until the water has evaporated (about 5 minutes).
Add salt and pepper.

Serve with optional accessories such as fried or cold canned ham, dried reindeer meat, Quorn or why not with freshly caught fish.
