        Huevos Rancheros

        Serves 4

        • 100 g spicy chorizo ​​sausage
        • 1 onion
        • 1 fresh chili
        • 2 tomatoes
        • 1 can of kidney beans
        • 1 clove of garlic
        • Cumin
        • 4 eggs


        Fry the chorizo on the pan. Add the chopped onion, chili, tomatoes and beans and cook for a few minutes. Season with cumin, salt and pepper.

        Make four small holes in the sauce with a spoon and beat the eggs directly into the holes. Let the eggs cook until the white has settled. Serve with chili sauce and freshly ground pepper.

        Directly translated, the name of the dish means "Eggs on ranch-style", which is exactly what it is - a fantastic breakfast, easy and straightforward, with lots of flavour and energy for the day!
