After several days of tough trekking, varying your food with different flavors can make wonders to your energy level. A good tip is to pack different spice-packs for your meals, could it be dried spices or as in this recipe, a homemade paste. Yum!

At home, mix the paste together and place in a container or bag to bring. Pack your eggs securely. You don’t have to pre dry your vegetables unless you’ll be out for long and don’t mind the extra weight, then bringing fresh vegetables are fine.

If you have pre-dried vegetables make sure to soak them a couple of hours prior cooking. Cook the noodles in salted water, drain and put aside. Fry the vegetables and add into the noodles. Mix with the sauce and the seeds and nuts. Fry the egg sunny side up and serve!
